The draw of the sea is undeniable. The local shoreline pulls us in, whether we’re foraging, relaxing or catching mackerel on a summer’s evening. Ingredients from the coast are frequently the highlight of our menus year round. In this course, we share with you the skills needed for the preparation of some of our favourite recipes from the Jurassic Coast.

COOKING FROM THE COASTLINE

How lucky we are to be by the sea. Always exciting, the ingredients we forage and fish from the coast are ones that we treasure most highly. Wild and synced with the season, the delicious bounty is ever-changing, keeping us on our toes. In this course, we explore the different preparation techniques and skills needed for bringing the seaside into the kitchen and onto our plates.

Covering the preparation of both fish and shellfish, we’ll share our favourite recipes for each, as well as introduce you to foraged vegetables and herbs from along the coastline. In keeping with the wild nature of the ingredients, recipes will feature natural cooking techniques to bring out the unique flavours specific to the Jurassic Coast.
